Healthy warming meatball delight.

Today I decided to make meatballs. Saw Jamie Oliver make them and got some tips but I am not a big fan of fennel so Tim to create my own version. I added a few extra veges to make the healthier so my son would eat them (healthier for me too).

Ingredients

1kg pork mince

1kg beef mince

2 carrots grated

2 Spanish onions diced finely

1/2 bunch of parsley diced finely

1 tablespoon of Persian spice

3 eggs

pepper to taste

1/2 a packet of table wafers (125 g pack) crushed finely in a mortar and pestle

if you want extra heat add sone fresh chilli or chilli past

1 tablespoon tomato paste

olive oil

Directions

Place all ingredients into a large bowl and mix thou roughly with your hands and roll into small, golf ball  sized, balls.  Fry them lightly in olive oil to seal. Wet your Hans and roll the balls smooth and place them in  pasta sauce that has been heating in a wok. A wok is better than a pan as you can roll the balls  out of the way more easily. Use whatever pasta sauce recipe is your favourite or cheat like me and use a commercial one that is topped up with a couple of cans of tomatoes. I added finely diced  basil leaves for extra flavour. Let them simmer gently in the pasta sauce until cooked through.

Serve with pasta and a sprinkling of feta and enjoy. I added some baby spinach for extra veges.
